My mother has been diagnosed with various autoimmune conditions inc “central sensitization syndrome”, “sjogrens syndrome”, and “functional neurological disorder”. She is really suffering from pain all over body tho when visits any sort of doctor they can see no signs of pain or even inflammation. Really upsetting to see her get worse and worse and have no discernible cause or cure. What do?

It is possible that she is suffering from thiamine deficiency. Pain all over + "functional neurological disorder" could easily be describing Wernicke's encephalopathy. I went through this myself. I realized my problem was related to thiamine deficiency/functional blockage when I took 300-350 mgs of thiamine hcl powder, mixed in water, at least 30 minutes away from consuming any food. Within 45 minutes, all my pain disappeared, my brain fog cleared, and my body temperature increased a full degree to normal. It was amazing and made quite an impression on me.
I'm not a doctor and I don't play one on TV. So I could be way off here, but it is something you might consider.
Simply taking some thiamine hcl with water (not juice) and evaluating the body's response is quick, safe, and involves no doctor. Thiamine hcl (vitamin B1) is considered a "safe" supplement. Thiamine hcl by injection is the standard treatment for Wernicke's because the danger of it progressing to Korsakoff syndrome is very real.
Doctors don't consider the possibility of Wernicke's encephalopathy unless you're a raging alcoholic. So they don't bother to check for it.

When someone has a thiamine deficiency/functional blockage, they cannot convert make ATP (cellular energy) via oxidative metabolism properly. Normally, the process of oxidative metabolism burns glucose in the presence of oxygen and the end product is carbon dioxide. Thiamine acts as a cofactor for several enzymes in the process. If Thiamine is not available, then the process is derailed and lactic acid is the end product instead of carbon dioxide.
Lactic acid build up is known as lactic acidosis, which is extremely painful. Thiamine supplementation is known to resolve (quickly) lactic acidosis. This is how thiamine supplementation resolves the pain.
As people age, their ability to absorb thiamine through the intestinal wall doesn't work as well as when they were younger. This is why older people are more likely to run into trouble with thiamine deficiency. Thiamine deficiency is implicated in many chronic diseases seen in old age, including all the dementias.
