    Are chicken fillets fried with olive oil ok?

        @womenthighs No. If you’re going to fry use coconut oil. Many of us don’t eat a lot of chicken because of PUFA but chic breast isn’t the worst I guess.

          Coconut oil has a pretty low smoke point and is better for general use, tallow is best for actual frying

            @greg I use coconut oil for frying and also for popcorn; the smoke point for coconut oil is actually pretty high. It's a whole lot higher than the smoke point for olive oil. That said, if you are deep frying, it may not work as well as lard.

            This article says coconut oil's smoke point is 350 degrees so it works for sauteing. I use the "medium" level on my gas range when cooking with coconut oil.

              @mostlylurking refined coconut oil works a treat for deep frying. i’ve made really nice chicken tenders and fries with it. regular coconut oil seems ok for oven fries, but refined is probably better for higher temps.
