Any difference in using apple cider vinegar vs. white or rice vinegar etc. My girlfriend hates the taste of apple cider vinegar which is what I usually use to make it, I feel like a rice vinegar would be less potent and easier but am curious if it would still be as effective?

The label on my ACV states that it is diluted to 5% acidity. The acidity is the potency and 5% is the standard acidity.
If you choose to use white vinegar, read the label and if necessary dilute it to 5%. If it is too acidic it may damage the tissues in the mouth and throat.
My issue with rice vinegar is the same issue that I have with rice. It may be contaminated with arsenic. The rice plants are very good at extracting arsenic from the soils. It is my understanding that the arsenic in the rice comes from fields that were formerly used to grow cotton. The pesticides used on cotton fields contained arsenic and it still remains in the soil. In the US, it is best to avoid rice grown in the deep south.
