@77sahara Restoration Thyroid cookbook has some great recipes. The coffee jello shots are my personal favorite:

      Coffee jello shots
(Homemade condensed milk is recommended for this recipe however raw heavy cream can be used in place)

      Ingredients
      2 1/2 T. great lakes unflavored gelatin
      1/2 cup water
      2 cups brewed organic coffee
1 cup homemade sweeten condensed milk
1/3 cup organic cane sugar-(Use only if you don’t use the condensed milk)
1 cup raw heavy cream or milk (Use only if you don’t use the condensed milk)

      Instructions

      1. In a bowl, mix the water and gelatin together with a fork to help incorporate it. Allow the gelatin to bloom for 10 minutes.
      2. Heat the coffee in small pot, add the gelatin and stir till it dissolves.
      3. Add the condensed milk. **If you don’t use condensed milk, use the cream and sugar
        instead.
      4. Pour the coffee mixture in 8x9 pyrex and let it set to cool. Place in the refrigerator for at least 4 hours
      5. Cut into desired pieces

I warm 64 oz of juice, (not boil, just warm) and add to that about a cup of sugar. I use whatever juice I have, but my kids seem to like grape and cherry best.

Separately I add about a quarter cup of water to about a cup of gelatin, (I do this so frequently I don’t really measure anymore-you could use more or less gelatin depending on the consistency you like). This “activates” the gelatin and makes it easier to incorporate with the juice.

Next I add the activated gelatin to the warmed juice and stir till it’s all incorporated. I pour the mixture into whatever molds or a baking dish with sides and let it set in the fridge.

In place of juice sometimes I use frozen fruit and cook it adding the sugar to make more of a compote. If I use frozen fruit I will blend the mixture with a stick blender, (but you could use a stand alone blender too I’m sure). Once I have a fruity “liquid” I’ll add the activated gelatin.
