PUFAs and other inflammatory agents have made their way all across the world to the extent that the normie diet in every country has been corrupted. While you could probably find some isolated pacific island where they only eat plantain and coconut oil, I'm inclined to think that the Italy has the most peaty cuisine simply on account of coffee, gelato, parmigiano reggiano and affogato. Their use of Olive Oil (MUFAs), while certainly not ideal, is much better than other national cuisines' fetish for vegetable oils, see Eastern Europe. Of course, the degree to which the modern Italian adheres to the traditional diet is questionable, quite likely that we are moving towards a global, homogenised slop like with everything else.
