Why is my sleep worse on days I drink coffee / it’s hard to fall asleep even if I drink it at 9am. I almost feel like the effects last for a day or two.

I feel like it makes my metabolism too fast so I franticly eat starch slop to calm down the starvation. But this just makes issues worse in the long term.

Should I force a cup of coffee everyday and hope I adapt? I have SIBO , lactose intolerance, poor liver, bad liver glycogen etc just looking to get things up to speed again.
