Quite some time ago I found a couple of videos on the Ray Peat Clips channel about milk powder pancakes. At one point, Ray Peat was having them every day according to this video.
Below, you'll find the recipe I use based on this video along with some slight tweaks I've made and my recommendations for sweeteners with some photos attached to make the process easier to understand and a photo of the finished product attached. I hope you enjoy.
RECIPE:
1/2 cups of milk powder
1 raw egg (if you’re sensitive to the tryptophan in the whites, the yolk will suffice)
a dash of vanilla extract
Milk (Any type is fine. Experiment with your tolerance. Pour to consistency, it depends on how you like your pancakes and how much you’re willing to stir.)
1 tablespoon of coconut oil
1 tablespoon of raw organic honey
A dash of pumpkin spice (if you tolerate it)
INSTRUCTIONS:
Gather your milk powder, raw egg, and vanilla extract into one mixable entity.
From there, begin pouring milk and stirring until you get a consistency you like. I believe this consistency was about 1/6th of a cup.
Next, put a tablespoon of coconut oil into your pan at LOW heat.
Once it melts and the pan is hot, use a fork and use it to scrape the mixture out onto the pan. It'll naturally take the form of a circle.
These things cook quickly, so trust your instinct on the flipping time. Personally, I like to let the mixture sit for a bit, lift the pan off of the stove, and move it around. Once it moves around easily it's time to flip.
Let the other side cook and use the same test. From there, slide the pancake off of the pan onto a plate and pour the rest of the coconut oil onto the pancake. Then, top it with raw honey. Boom. Peaty pancakes with raw honey for antioxidants. If you don't think Peat spoke highly of honey, think again.
I hope you enjoy! I have this everyday just like peat because it tastes very good. If you want, you can add some berries to the mixture. I do that sometimes.
