When and how much to eat?

I had a thiamine deficiency and thus was always low energy and so it seemed like how much I eat didn't really matter.
But now that's resolved and I notice I am hungry a lot more and how much I eat directly impacts my energy levels.
Should you eat before sleeping? Common wisdom says no, but intuition says yes. Brain is using up more energy during sleep and if I didn't eat to satiation before sleep I would be woken up prematurely by ravenous hunger in the morning.
I am also a fatso, so in theory I don't mind going hungry for a few hours per day but with how much it affects energy levels I am having second thoughts, if my eating habits will result in low metabolism then I am not going to lose much fat from that either.

@API-Beast Best to eat as often as possible, and to not overeat to where it affects your digestion poorly.
Just eat when you're hungry, if that's often, better. Try to adapt your diet to where it's not causing problems, and fit at least one carrot salad in there a day, and you should see improvement in your health. Whether this would quickly translate to weight loss is not clear, but that shouldn't be a goal anyway.
Eat something easily digestible for bed every night! Semi-skim warm milk w some salt and sugar/honey/chocolate, ice cream, cheese with a bit of homemade marmalade, a few dates! Anything with a bit of fat, salt and sugar will be fine to digest. Avoid heavy meals, starches and lots of soluble fibre, before bed

@CO3 For some reason I personally have an issue with warm milk before bed. It seems to just sit in my stomach, feel way too full.
Best thing that works for me before bed is ice-cream (Haagen-Dazs Vanilla). Sometimes add honey, sugar, salt, and olive oil.
