Milk Powder as Flour Substitute

I saw this post on that forum and it got me thinking... I wanna try making baked goods with skim milk powder. The pancakes work fine (altho a bit hard to get it right, might just be my low pancake skills) but cookies or a cake are more interesting to me.
Has anyone tried it?
Another question: Is the milk powder you guys get grainy? Mine has super big pieces in thre. Could be solved easily, just wondering.
Also pikey on twitter mentioned that nowadays they put nanoparticles in milk powder just FYI

Is the goal to avoid starch or to increase protein? I add cottage cheese to my pancake batter. Never going back. I also add it to scrambled eggs. Love the texture and they taste delicious.

@S-Holmes Yeah that's why Ray had them. Think it's his invention more or less. I don't have much starch, let alone wheat. And it's a nice protein boost
