Thyroid in neck meat: how to find?

I know the FDA requires butchers to remove the thyroid gland from animal necks. There are some Asian and Latin markets near me that sell pork and turkey necks and such, and I wonder if the regulations might be less strictly enforced there. If I wanted to verify whether an animal neck still contained the intact thyroid gland (to prepare in a soup, for example) what should I look for, and how would I recognize it?

I would just ask. In many Asian or Mexican stores there's a butcher that prepares the meat. You can ask them for the thyroid. I often ask for parts of meat that they don't use for my dog and it's never an issue.
Standard supermarkets will never give it to you, they follow the rules.
