Gelatin added to milk will probably help make a good head of milk.
Sugar to taste. If salt helps, maybe.
I buy a cheap Liberica variety of coffee. It is well-roasted, and because of its low price, gets sold quickly so I am assured it us fresh.
I don't try to buy organic anymore. Chances are it's only the high price that makes it "organic."
I spend on a good burr grinder. So the grind does not oxidize the beans. I never buy ground coffee. It is very oxidized and destroys the taste.
The Italian moka pot is cheap, but it makes good espresso. Don't have to buy espresso machines, but if I wanted to, a good one from China won't cost an arm and a leg at around US$50.
A frother I like is a standalone unit that creates a nice foam with a magnetically driven stirrer. Also warms up the milk as the foam is being made. It's a Capresso. Been using it for the past 20 years.
I enjoy my coffee because it's tasty and doesn't cost a lot to make.
Don't make it your meal. Make it an enjoyable part of your meal.
My breakfast is rice with eggs (omelet or sunny side up or over easy). With sardines in olive oil, or dried salted herring or anchovies, or crispy marbled beef nape (instead of bacon), or corned beef, or pork floss, or pork or beef sausage (German, Filipino, or Chinese). But very often, I have ground sirloin, sauteed insoy sauce, sugar, and garlic, with raisins. And accompanied by plantain banana-fried, which is a carbohydrate in the form of a fruit.
Sometimes, I have boiled or roasted sweet potatoes served with butter and brown sugar or honey.
Always with coffee. Sometimes black. Sometimes with sugar. And at times with well-frothed milk.
Sometimes, instead I drink hot Oolong tea instead, when my breakfast is rice porridge with salted egg and pork tripe, and preserved vegetables.
