      I just tried beef liver for the first time today and I feel great. I soaked the liver in milk for two hours prior to cooking it since that’s what I read online, but a mutual of mine on Twitter told me that ruins some of the nutritional content. Is this true, and if not does soaking it make any difference regardless?

        @Blitz I like liver better if it's soaked in milk, but I just soak it 10-15 minutes. I get 1/4" thick pieces (Skylark brand in Texas and New Mexico) that are individually packaged and flash frozen. Then I cook it in a little butter or coconut oil on medium-high heat, 2-3 minutes per side. I don't know if soaking it lowers the nutritional content but I really don't see how it could make much difference.

          @Blitz I wouldn’t say “ruin” it just has the potential to chelate some of the copper. I think bc lacto ferrin in milk binds to copper. But my guess is that because the liver is already so high in copper, soaking it a little bit probably won’t make a big difference.

          The more pertinent question here is, how can you try and get a fresher source of liver so that you don’t feel you have to soak it 🙂

            I'm in Texas. I like to use Skylark brand frozen calves' liver that I get at my local grocery store. It's cut into 4 ounce 1/4" thick pieces that are individually Cryovac wrapped so they last well in the freezer and they are easy & quick to thaw in a bowl of warm water.

                @MB It is convenient and the price is right too! I've also found it in New Mexico so for all I know it's available in many more states too.

                  @mostlylurking They have it in Florida as well, I have bought fresh liver from whole foods, and a rancher buddy used to give me his longhorn cow's liver. This was back when I lived in Texas.

                  Now, I buy skylark grass-fed brand because it's more convenient and properly portioned.

                    @The-New-Sun That's good to know! I've been eating Skylark liver for almost 10 years and I've been very happy with it. I tried Whole Foods' liver; I thought it was nasty and threw it away.
