Gelatin: 2 teaspoons
Water: 1/2 cup
Selected fresh fruit (e.g. kiwi, mango, strawberries): 200 g
Honey: 2 tablespoons
Orange juice: 100 ml
Calorie content: About 260 kcalSoak the gelatin in 1/4 cup of cold water for 5 minutes. Heat the orange juice in a small pot without bringing it to a boil. Add soaked gelatin to the juice, stir until completely dissolved. Cut the fruit and place them in bowls. Pour the warm juice and gelatin mixture over the fruit. Leave to set in the refrigerator for at least 2 hours. Sweeten with honey before serving.

I plan on making this Blood Orange Ricotta Cake soon.
I will try replacing cornmeal with masa as well to see if that changes the texture and flavor for better or worse.
