I'm cynical about the carrot salad. Raw carrots have nearly a 1:1 ratio of soluble to insoluble fiber. Meanwhile people are demonizing uncooked greens, but spinach for example has a superior 1:2 ratio of soluble to insoluble. Meanwhile it also has a ton of vit k and magnesium the latter of which promotes motility.

Anecdotally I've felt much better spamming 1-3 bowls of spinach with coco oil a day than I have doing carrot salads.

@wtpyrucet One of the benefits of the carrot is the antimicrobial compounds it contains. Raw spinach is very often contaminated with E. coli, so it's not likely to affect the gut flora in a good way. If you digest it well, it can be a good source of fiber though

In addition to contamination concerns, some of us are wary of the drawbacks of oxalates. And the Vit-K in spinach is in the K1 form.

As for carrots being antimicrobial, one aspect of that is it's usefulness as an antifungal, there are some folks that will benefit from it.

Am not recommending that no one eat spinach btw, but to simply do so with care and to be aware of the potential drawbacks just like you would with anything else.

I've heard spinach can be high in heavy metals, particularly lead

@wtpyrucet The raw carrot salad is about the microbial cleansing only, you are not meant to derive nutrition from it. Spinach does not grow underground and thus also doesn't have any antifungal or antibacterial properties.
