Why would a Carbogen (CO2) generator need to include citric acid?

You simply need an acid to turn a Carbonite into CO2. You can try it yourself, put some egg shell (almost pure Calcium Carbonite) into vinegar and you also get CO2. It's basic chemistry.

i wonder if these water carbonators that use baking soda and citric acid instead of co2 tanks are good

@eduardo-crispino I think what's special about the carbonators is that they let just the CO2 gas into the water, not the Sodium Acid mixture, which is edible but wouldn't taste too great. Not sure if there is a household way to do that.
