    The most goated carrot salad recipe from Jacques Pepin.

    • 4-5 grated carrots
    • 1-2 tsp olive oil
    • 2-3 cloves garlic minced
    • black pepper and salt
    • 2 tbsp cider vinegar
    • 2-4+ tbsp fresh parsley chopped

    Mix together, give it a few minutes to combine.

    Unbelievable flavor from the parsley and sweet tang from the cider vinegar.

    I think I finally found a carrot salad recipe that is highly appetizing.

      To vary I'd add two grated apples. Fine so (50%).
      Best with bio apple vinegar (cider) but lemon juice could also match.
      No pepper if you suffer from histamine.
      Need a a cheese slice or (cottage cheese) to counteract oxalate if you're limit, or then take one dose potassium citrates.
      NB: I put my apples in a box with water and 1 tsp sodium bicarbonate, for 12', to get rid of 85 % of pesticides.

      Simply running a stream of water over an apple and scrubbing it with a brush won't be enough to remove most toxic substances. It will be cost-effective, but not enough, as this study on a few vegetables shows.

        Sounds very good. The parsley also has a decent amount of apigenin and is more than just for flavor.

        Another idea would be to also use some ginger. Although raw ginger isn't to everybody's liking and I'm not sure the intense taste destroys the overall taste of the other ingredients.

            @Luke ginger and radish plus soy sauce could be an Asian idea. Soy sauce doesn't bother me in small amounts.

                  @sunsunsun I think it's good before a meal. French style. Ironic to see so many recipes calling for veg oil instead of evoo.

                    @LucH the carrot is the pesticide. That’s why you eat it. Just buy organic and a grate the carrot. Or grow them. Super easy. Seed tape works well for handling the little tiny seeds!

                      What do you mean by this? Carrot is what the body is trying to purge, like coffee?

                      At any rate I think it does some good. It's filling and quickens digestive rate.

                        @Corngold I mean you eat the carrot because it is a pesticide. You’re gut being full of microbiota constantly producing endotoxin (dead bacteria and bacteria poop) the carrots function in our diet is to help remove this waste and functionally resist being digested (because it is a natural pesticide)
                        Rabbits and ground hogs and animals eat carrots but bacteria don’t unless the carrot has been damaged from lack of water or organic matter in the soil the carrot feeds ooff of.

                          This is what I needed. Gotcha. Yes I see your point. Aren't seeded fruits a bit sus? Like: blackberries, strawberries?

                          I'm going after melons, pineapple, apples, oranges, a lot more.
