Once when I was sick in Mexico my landlady gave me some unfamiliar pills, and as soon as I recovered I
had an intense craving for sour things, that I had never experienced
before or since; I suspected the drug might have caused some deficiency.
For a few days I squeezed lemon onto everything, and even ate them
plain, with pleasure. Then suddenly, the craving stopped. Animal studies
show that there are chemically appropriate cravings, but they are
guided by categories of nutrients that naturally occur together in
foods. Certain amino acids are detected as signals for protein, but
others aren't, and I think certain B vitamins work as signals. When I
suggested to a girl friend that salt craving was rational, she began
salting her food according to her premenstrual appetite for it, and
stopped having her regular premenstrual swelling. It has worked for
nearly everyone--I suspect that the few people who say it doesn't work
don't know what cravings are. Some people are very mechanical about
food, and think there should be something like medical instructions for
      everything they do.

In this context only and at a guess, signals are chemosensorory interoception.

That's probably only going to beg more questions. Enjoy.

          Ya. well seen: Enjoy ...
When speaking about learning to listen to body signals and transition period: Need for awakening and progressiveness. I explain.
If you question IA about the capacity of listening to body signals, you’ll get an oriented answer towards mindfulness and a pausing attitude, regarding perception, the ability to sense internal states…
Now, back to physical needs. Take into account that your body has been asleep. If you were eaten a lot of sugary food, your ability to sense environment has been captured and oriented. Captured by your microbiota. 70-80 % of our decisions are “approved” or not by our commensal bacteria. Now suppose you could be under control (quorum sensing). I don’t say it is. You just don’t perceive it when it is.
Now, second point: You don’t control anything when you’ve been used to eat a traditional manufactured combo food, I mean a mix with high fat and salt. Your taste buds are overwhelmed / overridden. This effect is often temporary and reversible, as long you’re not under control of your second brain. I mean your microbiome. If you’re aware sth goes wrong – take time to think and perceive. As Haidut would say, “think, perceive and act”. But not abruptly, or you’ll pay it. Some dominant phylum has the ability to influence neuro-captors. Need some progressiveness when reeducation has to take place… Allow a "reset" of your sense of taste and preferences. It’s going then to evolve …
Third, if you lack sth, you’ll appreciate it, until you’re full. Too much of a good thing is bad. Need variety and alternation, for most people.

I think signals mean are just as we understood to be. The body itself will tramsmit it but only a body that has not been desensitized by drugs can see see it. We can call it by many terms, such as intuition or call it being grounded, but in modern people that can largely be lost by practices of modern lifestyle, which produce other signals that interfere with that signal Ray talks about.

But as we come to understand and respect the wisdom of the body, and begin to rely more on our body to heal itself, we begin to become more sensitive to these signals.

Lately I have come to appreciate more of these signals. Some signals involve pain, but I have come to appreciate these as not complications, or side effects, but as healing that stresses our body, and have come to learn as I go how to deal with the pain involved. For example, as I detox lead, I experience joint pain on my hips, and see that as lead being mobilized out of my bone marrows in my hips, and see that as causing some inflammation from the lead that have yet to sequestered by glutathione and rendered inert so it won't anymore be a source of oxidative stress within, as it eventually get excreted fecally. Just so I can be thorough, I am using Emeramide, developed by Dr. Boyd Haley, which isn't yet FDA - approved.

Temporal thinking is the faculty that’s
engaged by an enriched environment, but it’s
wrong to call it “thinking,” because it’s simply
the way organisms exist... - Ray Peat Nov 2017 Newsletter

              10/10 additional context from @LucH and @yerrag.
