@Peatriot I used to grow produce a few years back and had some great tomato and beet harvests. Got some extra seeds from friends from anniesheirloomseeds.com
These carrots look amazing. They would definitely keep the salad more interesting. Parsnips or other root vegetables might have similar effects to the carrot salad (the nisin peptide I think is the antibacterial part of carrots)
I would highly recommend y'all testing the soil you grow in for heavy metals. Supposedly, some areas can contain lead or mercury in the top-soil. You can reach out to some local chemistry departments at universities for this kind of testing.
