Thoughts about my diet ? Do I have potential to achieve PUFA deficiency in a few years?

That's a bit restrictive. With a focused effort PUFA can likely be "depleted" in less time than a few years.

And last but not least, wash / peel your potatoes and remove the eyes, this will lower the solanine content right off the bat. Some nations also spray their potatoes for storage purposes. You'll especially want to wash/peel if you're boiling the potatoes in a soup since you'll also be drinking the water.

Potato is the best carb source because it has a extremly low PUFA content compared to other carb sources like bread or pasta. More vitamins and minerals aswell.

I always remove the eyes if those are there, but i keep the skin on for the nutrients. A lot of the nutrients seems to be in the skin , like copper for example.
I remember that thread by Georgi Dinkov , it is very intresting. Do you know how many grams of fat the monkeys were eating on the "fat free diet" ? I assume it cant be 0 gram fat in the literal sense unless they were semi fasting on nothing but white sugar or pure dextrose/glucose powder and water. Even William Brown ate 2 grams of fat when he was on the extremly low fat diet.

Not to mention both protein and amino acid precursors known as ketoacids.
From what i've read potatoes and dairy together are supposedly a good choice for subsistence cultures. I'd rather not find out but if one were in poverty it's a doable healthy diet if done right.

As long as you keep the solanine content and mitigation measures in mind, scrub then boil well, don't consume the water etc. I wouldn't want the effects to slowly creep up on you. Greenish color under the potato skin is a giveaway for extra high solanine content btw, it can still be peeled and safely consumed though.Not sure if there was any fat content in the monkey's diet, but yea, hard to be zero fat.
As for the lowfat milk, i see you've read some of Travis's posts about milk homogenization lol. We don't want raw milkfat & casein running through our bloodstream, yikes. Have you read about improving milk's digestion by combining it with coffee?

I haven't read about coffee improving the digestion of milk yet. I should start adding some coffee powder to milk, maybe instant coffee. What is the mechanism behind coffee improving milk digestion if they are mixed together ?
About Travis posts on milk homogenisation , I havent seen those actually, but im trying to search for those posts on RPF now

@Ray-Peat-Fanboy Yea Potatoes are great I just haven’t seen anyone eating 5lb per day. But really that’s how most people used to eat for thousands of years. Like 1 kilo of starch as the base of their diet.

I don't recall the mechanism behind coffee and milk digestion but had heard it referenced plenty of times in the other forum. It may take quite a bit of coffee though maybe 2/1 or 3/1 coffee/milk but i'll guess that any amount may help at least some folks. Instant may make it easier. Had also heard the benefits of combining are a two way street with milk binding some of the less helpful tannins in coffee etc.
i'll try to find Travis's homogenized milk persorption comments and post them here if i do.

I buy potatoes once a day or once every other day. I live close to a grocery store so its quite easy and convenient.
I have had no problems with dry skin.
The potatoes I eat has never had eyes on them luckily.
I put lots of salt on the boiled potatoes , sometimes some herbal spices or black pepper. Occasionaly maybe some apple cider vinegar.
Yes my mood is very good on this diet. I would say the high amounts of potassium and carbohydrate has a very noticeable anti stress effect. I even feel physically more relaxed after those big potato meals , like no muscle tension at all.
Recently I have added the routine of taking 100 -300 mg thiamine HCL on empty stomach 30 minutes before eating the potatoes, and I think this has helped with converting the carbs to CO2.

I see. For me I have found that starch gives me the most satiety. I need a high starch diet , otherwise i'll get too hungry.

Yes , I do believe a high starch diet was very common in how people used to eat in the past.

It's all homogenized btw.
It's that skim and 1% milk have less of the micronized [homogenized] milk fat that's theoretically persorbed undigested and deposited raw into the bloodstream. My explanation is way too oversimplified obviously, there's much more allegedly taking place here.
Homogenized 4% whole milk would theoretically do us more damage simply due to having more milk fat to begin with.
None of this is to scare people away from milk. Keep drinking it folks, find the right type and quantity that most agrees with you. A2, goat, regular, 4oz at a time or 8oz's, find your sweetspot, keep experimenting, it doesn't have to be liters a day either. Some may need to work on their digestive system first of course...
I've both switched to 1% & skim and lowered my overall milk intake a bit, i found it much too calming in a mind numbing sort of way. It doesn't seem to happen with cheese though.

Peat said that starch granules remain undigested, perforate intestinal walls and goes into the brain creating inflammation.
Life is different without starches, more emotions and life seems more vivid -
@Androsclerozat How do you know its not the extra sugar that you replace the starch with thats enhancing your life, rather than the removal of the starch specifically?

There is always a spectrum of vividness in life
Even a small portion of starch can disturb it, but I understand that one small meal every 3 days is fine
The more I ate starches the less vivid life was and the less I cared to see my friend
I tried high sugar low starch diet and I was still not interested in watching people's reactions and if I was to play a basketball match, I would get competitive, while on sugar I would be carefree.
