As people are saying. Peaty games would be where you don't induce extreme stress like competitive multiplayer games (Fortnite, cs, dota, etc).
Here's a chart

I think it would be more helpful if people discussed in what ways video games are beneficial and how videogames are damaging, instead of just naming any given game. Such a discussion would help others rethink the why and what of video games, while namedropping has no valuable contribution. To a degree the medium is the message, so a wider discussion of the social ramifications of video games on society would also be of great importance.

Minecraft?
Probably only applies to creative mode. The late stages of playing survival often get dull, especially in vanilla and single player, since projects would be time consuming and grinding for the resources needed for it is very boring.

Most videogames are stimulating to the mind, I'd say what's important for bioenergetics is that you often try new games instead of stagnating into autopilot mode and playing the same stuff all the time, or using them as escapism.
